Spelt Pancakes

“But mommmm, those pancakes take forever”.
But they're worth the wait!

From King Arthur’s Whole Grain Baking recipe book, I bring you today’s breakfast: Simple Spelt Pancakes
- 2 cups (7 oz) of freshly milled spelt flour
- 2 tablespoons of sugar
- 1 tablespoon of baking powder
- 3/4 teaspoon of salt
- 1 3/4 (14 oz) cups of milk
- 2 tablespoons of unsalted butter, melted
- 2 teaspoons of vanilla
Combine all of the dry ingredients and whisk.
Combine all of the wet ingredients and make a well in the center of the dry ingredients.
Pour the wet ingredients into the dry ingredients and whisk until combined.
This batter is extremely THIN. If you’re like me, you will think you did something wrong.
Allow the batter to sit for 15 minutes.
Heat up a skillet or griddle on medium high heat and cook thoroughly. I noticed if I don’t use a high heat, the pancake kind of tastes doughy in the middle.
