Soft Wheat Tortillas

My friend Paige shared this recipe from Simply Mama Cooks on YouTube.
This is the second time I have made these tortillas and they are very soft and easy to make. Although the dough is extremely sticky, keep kneading it and do not add flour. The more flour you add, the stiffer the dough becomes. I used a lot of coconut oil to keep the dough from sticking while I kneaded it.
Tonight I made these tortillas for Chicken Enchiladas.

3 cups whole wheat flour, I used Hard White
1/3 cup coconut oil
2 tsp baking powder
1/2 tsp to 1 tsp salt
1 1/2 cups hot water. (I achieved the sticky consistency with only 1 cup of water)
1 tbls extra oil or coconut oil (for hands and work surface)

Combine all ingredients, knead for 5 minutes in bowl.

Knead outside on countertop for an additional 10 minutes.


Separate into little balls

Lightly cover dough and rest for 15 minutes
Roll or press dough into tortilla shape and pan fry for about a minute each side on medium-high heat.
