Hoagie Rolls

I decided to make roast beef for dinner but I wanted to eat it on hoagie rolls. So I decided to make a quick batch of hoagie rolls.

They didn’t turn out like the picture in the book. I think my expectations are a bit high for only doing this for 9 months. Ha!

I used the recipe from America’s Test Kitchen Bread Illustrated book. It called for bread flour but I just used hard white and kept everything else in the recipe the same.

The dough was extremely sticky. It could have been the humidity today. I added about 1/4 cup more flour than the 5 cup recipe called for. The dough looked great in the mixer but when I took it out it was difficult to shape for rising. I didn’t add anymore flour since it seemed to have passed the window pane test.

Rising was slow and I feel like the bread was underproofed since it didn’t spring.

I am sure it will taste delicious and it’s just nice to have another type of bread in the house for recipes.
