Baking with Einkorn

I bought some Einkorn after being told it had a higher protein count and is easier for the stomach to digest as it is a true ancient grain.
So my first time baking with Einkorn, I made chocolate chip cookies.
The grain chart on my site doesn’t work for Einkorn since it is a smaller grain than the hard red and white wheat berries.
The taste of Einkorn is interesting. To me it has a little weird taste but quickly disappears as you continue to eat.
My next einkorn experiment will be bread for a friend who has a gluten allergy.
